  1. Preheat your oven and grease a cake pan.
  2. In separate bowls, add the wet ingredients and the dry ingredients.
  3. Combine the wet and dry ingredients together well.
  4. Bake in the preheated oven for at least 20–25 minutes.
  5. Cool, garnish, and serve.

Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp. baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup extra-virgin olive oil
  • 3 large eggs
  • 1 cup of plain Greek yoghurt
  • 1 tsp. vanilla extract
  • Zest of 1 lemon (optional, for added flavour)
  • Powdered sugar (optional, for dusting)

Instructions:

1. Preheat the oven: Set the oven temperature to 175°C/350°F. To prevent sticking, gently flour or line an 8-inch round cake pan with parchment paper after greasiness with butter or nonstick spray. 

2. Get the dry ingredients ready: Mix together one cup granulated sugar, one and a half cups all-purpose flour, one teaspoon baking powder, one teaspoon baking soda, and one teaspoon salt in a medium-sized mixing dish. Mix these ingredients evenly by mixing them together. After doing this, the baking ingredients are certain to be spread evenly. 

3. Get the wet ingredients ready: Add 1 cup of extra virgin olive oil to a sizable mixing basin. One by one, crack and add three large eggs, beating well after each addition. Add one cup of plain Greek yoghurt and stir until the mixture becomes smooth. Add 1 teaspoon of vanilla extract and 1 teaspoon of lemon zest.

4. Mix the wet and dry ingredients together: The dry ingredients should be added to the wet mixture evenly. Partially complete this by adding a small amount of flour mixture at a time. Using a spoon or spatula, carefully mix the ingredients together. Stir until just combined. Avoid over mixing, as this may result in a dense cake.

5. Fill the pan with batter: Fill the prepared cake pan with the batter. Evenly distribute the batter in the pan using a spatula. 

6. Bake: Turn the oven on and place the pan inside. Cook for 20–25 minutes, or until a toothpick or cake tester inserted into the centre comes out clean.

7. Cool: Take the cake out of the oven when it’s done. Let the cake cool for approximately ten minutes in the pan on a wire rack. After the cake has cooled for ten minutes, carefully move it to the wire rack to finish cooling after running a knife around its edges to loosen it. 

8. Serve: If desired, dust the cake with powdered sugar once it has cooled. Cut and present as preferred.
