How to Make Coconut Sheet Cakes

Make the Coconut Cake:

1. Set the oven temperature to 350°F and butter a 9 x 13-inch baking pan with oil and dust with flour; set aside.

2. In a large bowl, add the flour, corn flour, baking soda, baking powder, and salt, and whisk for a few seconds. Set aside.

3. In a separate bowl or an electric stand mixer, add granulated sugar and unsalted melted butter. Whisk together for 2 minutes, or until smooth or fluffy. Add eggs to the mixture one at a time and whisk again.

4. In a bowl, add the source cream, coconut milk, vanilla extract, and coconut extract and whisk together until well combined. Add half of the flour mixture and coconut mixture to the sugar mixture and mix until combined. Repeat the process slowly, and mix until well combined.

5. Evenly distribute the batter after pouring it into the prepared baking pan.

6. Bake in the preheated oven until a toothpick is placed in the centre; it should come out clean after 25 to 30 minutes of baking in a preheated oven.

7. Remove from the oven and cool completely on a wire rack for 10 minutes.
