What is Vada pav recipe ?
Vada pao is a popular Street snacks in Mumbai. It consists of a spicy potato filling ( batata Vada ) between the laadi pav (bread roll). The potato filling is mixed with herbs and spices and then coated in a besan (gram flour) batter. And deep-fried them until they turned golden, served with dry garlic chutney and fried green chilies.
Basic parts of Vada pav recipe
1. Batata Vada – A good batata Vada is a main element of Vada pav. If your batata Vada is perfect, then half of your work is done. By using a few ingredients, you can make a perfect Vada for your kids, family and friends. The ingredients mentioned below are perfect for small (8-10) batata vadas.
2. Laadi pav – Laadi pav is just a Indian bread. This is a soft fluffy bread. Look for Indian bakeries and cafes, this is the closest you’ll get to the taste and look of the Mumbai Vada pav recipe or you can make it yourself at home by using any flour, like all-purpose flour, whole wheat flour etc.

Ingredients for Mumbai Style Vada pav recipe
- 5 Boiled potatoes
- Oil / ghee as required
- 1 teaspoon mustard seeds
- 2 chopped green chillies
- 1 stalk curry leaves
- 1 teaspoon ginger garlic paste
- 1/2 Red chilli powder
- 1 tablespoon turmeric
- 2 Cup gram flour (besan)
- 1 cup water
- 1 tablespoon Butter
- 1 tablespoon chopped coriander
- 1 teaspoon hing
- Salt to taste
- 1 tablespoon lemon juice
- grated coconut
- 5-6 whole garlic
- 6 pav
How to make Mumbai Style Vada pav recipe ?
• PREPARATION FOR BATATA VADA
1. Take a big bowl and add besan (Gram flour) and add 1/2 teaspoon salt, Red chilli powder, hing, haldi, Coriander powder.
2. Take a big bowl and add besan (Gram flour) and add 1/2 teaspoon salt, Red chilli powder, hing, haldi, Coriander powder.
3. Whisk everything together until the batter is smooth. Then cover the batter for 15-20 minutes for better consistency.
4. After the batter, now it’s time for batata Vada tadka masala. In a pan heat oil and add 1 teaspoon of mustard seeds roast them until they it start to pop up.
5. Add curry leaves, chopped garlic and ginger, onions (optional) and roast until golden.
6. Add spices 1/2 Red chilli powder, garam masala, 1/4 turmeric, coriander powder, cumin powder,salt to taste.
7. Lightly roast all the spices together for 2 minutes on low flame, and then turn off the flame
8. Now Mash the boiled potatoes in a bowl and add pinch of salt. Next, add the prepared Vada tadka to the mashed potatoes and mix them together.
9. Add fresh coriander powder and grated coconut(optional) to the potatoes and mix everything to make a Vada masala.
• Balls of batata Vada
1. Shape the potato masala into small balls.
2. Now heat the oil in a pan for deep fry the potato balls
3. Coat the potato balls into the besan (gram flour) properly and deep fry them for 3-4 minutes Till the vadas are golden and crispy.
• PREPARATION FOR DRY GARLIC CHUTNEY
1. Fry the leftover gram flour (besan) batter in the pan and take it out.
2. Take a few garlic cloves and fry them until turned reddish in the oil and then take them out.
3. When the gram flour and Garlic cloves have cooled down then mix them together in the blender along with salt and kashmiri red chilli powder.
4. Add the blended chutney in a bowl and the Vada pav recipe garlic masala/chutney is ready.
• Preparation for fried green chilies
1. Take a few green chilies and make a cut in them.
2. Heat a pan add oil and fry green chillies for a few seconds.
3. Take them out in a bowl and add pinch of salt on the chillies.
• Serve!
Add green chutney to the pavs, stuff the batata Vada between the pav, sprinkle Garlic chutney on top and press it down. Add a fried green chilli on the top and enjoy !!
