How to make gluten free Christmas cookies?

Instructions:

1. Preheat Oven: Place parchment paper on a baking sheet and preheat the oven to 350°F (175°C). 

2. Combine Wet Ingredients: In a large bowl, whisk the powdered sugar and granulated sugar with the softened butter until the mixture is light and fluffy. After adding the egg and vanilla essence, beat until well blended. To combine the dry ingredients, combine the gluten-free flour, baking soda, salt, and cinnamon (if using) in a separate bowl. 

3. Mix: Add dry ingredients to wet components gradually, stirring just until mixed. Using your hands to finish incorporating the dough could be necessary.
